The right touch
Our craft
From the sourdough fed every morning to the last batch of the evening, every Epiane loaf passes through our bakers' hands. Here is how we work.

Where it all starts
SOURDOUGH.our memory.
Our natural sourdough is fed with flour and water every day. It gives our breads their open crumb, their thick crust and that slightly tangy taste that makes all the difference.
No added yeast in our sourdough breads: just time. Our doughs ferment slowly, for up to 48 hours, for breads that are easier to digest and keep for several days.
From flour to bread

01
Kneading
Flour, water, salt and sourdough. Slow kneading that respects the dough and preserves the aromas of the wheat.
-
02
Fermentation
The dough rests in the cool for many hours. This is where flavour and a beautiful crumb are born.
-
03
Shaping
Each loaf is shaped by hand, weighed, then scored with a blade just before going into the oven.
-
04
Baking
A long bake on the oven floor, for a golden crust that crackles as it leaves the oven.

Homemade flour
ANCIENTgrains.
Romain grinds our flour himself on a stone mill, from wheat grown close to home, including ancient varieties with a richer, more rustic flavour. They need more care, but give breads a unique character.
- Homemade flour, stone-ground
- Charentes-Poitou PDO butter
- Free-range eggs
- 64% dark chocolate made with pure cocoa butter
ALL BUTTER. laminated in-house.
Our croissants and pains au chocolat are laminated the day before with PDO butter, then baked at dawn so they are crisp from opening time. Our pastry chefs follow the seasons: strawberry cakes in spring, fruit tarts in summer, chocolate entremets in winter.

Ear of wheat + coffee bean
COFFEE.& beer from our grains.
Our specialty coffee is roasted by our head barista: the perfect companion to a still-warm viennoiserie or a slice of sourdough toast.
Our ancient grains don't stop at the bakehouse: they also go into our locally brewed craft beer.
